Guys this recipe was requested so many times. I honestly wanted to put it on the blog a month ago. Unfortunately, I just could not get it together. Blah! Although it’s a little late, it is here and it’s perfect for the summer months ahead! It’s really easy to make and delicious indeed.
1 lb of devined shrimp
1 small pack of chicken tenderloins
1 family sized box of Zatarain’s yellow rice
1 red peoper
1 red onion
2 cloves of minced garlic
Salt and pepper
Your choice of seasonings (I used adobo, garlic powder, Lawry’s total seasoning, black pepper and onion powder)
Clean your shrimp and chicken and season accordingly. Sautee your shrimp and then put to the side. Sautee your seasoned chicken using olive oil and 2 cloves of minced garlic. While you are cooking your chicken, put on a pot of water to boil for your rice.
Follow the instructions on the box to cook your rice. While the rice is cooking prepare your mango salsa. Chop up your onion, mango, red pepper and cilantro. Mix it all together in a bowl and add a teaspoon of fresh lime juice and salt and pepper for taste.
Slice your pineapples directly down the middle and scoop out the inside. Make sure to leave the juice at the bottom. I used the pineapple for a fruit salad and you can even put some in your mango salsa!
Now add your chicken, shrimp, mango salsa and rice to your pineapple and enjoy! If you decide to make it let me know how it turns out. Happy Cooking!
