School is back in session and that means we have a full schedule. Since we have limited time to spend together during the week, I try to make dinner as easy and quick as possible. The veggie chickpea pasta dish is very simple to make and I usually have enough to pack for the kid’s lunch for the next. Because it can be served cold it is convenient for them to carry without the need to heat up. Barilla® Chickpea Rotini takes about 7-9 minutes to cook. While the pasta is cooking, I chop up my peppers, cucumbers, tomatoes and onions. I also put aside my black olives and shredded cheese. I sometimes I will add broccoli as well. Once the pasta is done, I drain and let it cool for a few minutes. I then add all the veggies along with Italian dressing and ranch dressing and mix together.
