School is back in session and that means we have a full schedule. Since we have limited time to spend together during the week, I try to make dinner as easy and quick as possible. Isaiah is in his last year 8th grade, so we have upcoming trips and events to prepare for. In addition, Ryann is totally trying to make her last year of elementary school a memorable one. Even though we are loving everything about the season we are in, it is an extremely busy one. Juggling multiple schedules leaves us little time for ourselves. Once we get home it is time to settle down, eat dinner and get ready for the next day so that’s why we love this easy, weeknight meal!



The veggie chickpea pasta dish is very simple to make and I usually have enough to pack for the kid’s lunch for the next. Because it can be served cold it is convenient for them to carry without the need to heat up. Barilla® Chickpea Rotini takes about 7-9 minutes to cook. While the pasta is cooking, I chop up my peppers, cucumbers, tomatoes and onions. I also put aside my black olives and shredded cheese. I sometimes I will add broccoli as well. Once the pasta is done, I drain and let it cool for a few minutes. I then add all the veggies along with Italian dressing and ranch dressing and mix together.



Not only does this dish take no time, but everyone also enjoys it! Even Nox ask for 2nds and sometimes 3rds! One thing for sure is you cannot go wrong with Barilla® Chickpea Rotini.
